Autumn Loaf

Since I had some leftover mashed sweet potatoes from the biscuits I made for dinner, I decided to make some bread.  I also had some cranberries, pumpkin puree and orange juice.  Well, I didn't actually have any OJ on hand, so I made Yobo run out to get it because I thought it would go great with the other flavors in this bread. Thank you Yobo!



  • 4 eggs
  • 2/3 cup pumpkin puree
  • 2/3 cup orange juice
  • 2 cups sugar
  • 1/3 cup packed brown sugar
  • 2 cups mashed sweet potatoes
  • 1 cup cranberries, roughly chopped
  • 3 1/3 cups AP flour
  • 1/2 tsp baking powder
  • 1 1/2 tsp salt
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 cup chopped pecans
Preheat oven to 350 degrees F.  Lightly grease two loaf pans.

In a large bowl, combine eggs, pumpkin, orange juice, sugars, sweet potatoes and cranberries.  Mix well.  Add the dry ingredients and pecans and stir to combine.  Pour into loaf pans and bake 60-75 minutes.  Let cool and slice. NOMS!
